The choice to be a part-time vegetarian, otherwise known as a ‘Flexitarian’ is rising in popularity. The growth of ‘flexitarianism’ in the Netherlands is putting more demand for the food industry to produce new and interesting meat-free products and concepts to accommodate this lifestyle.
the project:
In groups of two, design a meat-free/ fish-free lunch concept for eating on the go, or to go. Design a flyer that promotes this concept.
the concept:
The Jack tree, native to South East Asia, produces one of the largest fruits in the world: the Jackfruit. Weighing up to 40 kg, the flesh of a jackfruit is fibrous in texture, starchy, and nutritious. The unripe flesh of the jackfruit is firm and mild and easily absorbs flavors. Due to its fibrous texture, it strongly resembles meat when fried or sautéed. The Jack fruit also is considered an important plant for food security, because the tree itself requires little care or maintenance, performs well in poor soil, and produces fruit high in nutrition.
Working together, a fellow student and I designed the concept, ‘Jack Packed!’.
Jack Packed! is a to-go lunch concept featuring marinated Jackfruit as THE meat-free alternative to a pulled-pork bbq sandwich. The fruit is marinated and slowly cooked in barbecue sauce, then piled high on soft burger bun, paired with fresh veggies. Served in a to-go container for convenience, Jack Packed! Is a delicious and environmentally conscious choice for any veggie- and meat-lover on the go!
